11 Steps To The Perfect Steak
This 11 step procedure will teach you how to make the best steak for grilling. You won't even need to pull out the best steak knives you have, because these babies will be perfect!
These wagyu strip steaks could be considered the best steak for grilling
1.)Cover steaks in a very thin coat of extra virgin olive oil. Apply a healthy amount of salt, and pepper to your preference.Allow the steaks to become room temperature.
2.)Pre-heat the oven to 450 or 500 and make sure the rack is mid-oven. I do this ahead of time to avoid mis-timing later, and not having the oven pre-heated when I need it.
3.)Heat the skillet on the stove top until water immediately beads up and rolls off. Pretty much red-hot. I turn my burner on high and let it sit there heating the cast iron skillet for atleast 20 minutes. If you desire more of a grilled or mesquite flavor then perform the same procedure by placing a cast iron skillet on a grill. Just be sure you grill can get the cast iron skillet hot enough
4.)Put the fan in the nearest window and turn it on high. This procedure creates alot of smoke, and if you let it build up your smoke alerts will definitely go off. I don’t recommend doing this without good ventilation for this purpose.
5.)Drop the steaks into the skillet and don’t touch them for 1 minute, 25 seconds to 2 minutes depending on the level of char you prefer. During this time you are going to think they are burning and you should move them. Do not move them.
6.)Flip the steaks. Drop a healthy pat of butter on the top of the steak which should be pretty good and charred.
7.)Cook the second side for about 30 seconds less than the first side.
8.)Remove skillet from heat source. Drop 1 tsp. of butter into bottom of pan per steak. Let sit for 5 minutes.
9.)Insert probe thermometer, and place in oven. I will reiterate the the probe thermometer is essential. The last thing you want to do is cut into your steak to check doneness.
10.)Cook until 5 degrees before your target temp.
11.)Remove from oven and let it sit for 5 minutes.
At this point you are getting ready to eat a really awesome steak. Hopefully you made something to go with it. I prefer a salad, potatoes and a nice glass of red wine with my steak. Enjoy. Now you know how to cook a ribeye, how to cook a T-Bone, some of the best steaks for grilling.
I cooked this to 145, and presumably it came up to 150 while it sat for 5 minutes. If you’re unsure how to cook your steak, I have found this to be the optimal yumminess temp.
